  • 1/2 cup creamy peanut butter
  • 4 tablespoons unsalted butter (melted)
  • 2 large eggs (room temperature)

  • Semi-sweet chocolate chips for topping
  • 3 tablespoons peanut butter
  • 2 tablespoons coconut oil

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix the chocolate graham cracker crumbs, sugar, and melted butter until combined. Press about 1 tablespoon into each muffin tin slot.
  3. Beat together the cream cheese, sugar, and peanut butter in another bowl until smooth. Add eggs one by one, mixing well after each addition.
  4. Spoon the filling over the crusts until filled about ¾ full. Bake for approximately 17 minutes or until set.
  5. For the topping, melt chocolate chips, peanut butter, and coconut oil in a saucepan over low heat until smooth.
  6. Once cooled completely, drizzle or spread the topping over each cheesecake and chill in the refrigerator for at least an hour before serving.
