- 9 lasagna noodles
- 3 cups marinara sauce
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 pound mushrooms (sliced)
- 2 cups fresh spinach (chopped)
- Olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- ½ teaspoon dried thyme
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Boil lasagna noodles until al dente; drain and set aside.
- In a skillet, heat olive oil over medium heat. Sauté chopped onion until translucent. Add minced garlic, then sliced mushrooms with thyme; cook until tender. Stir in chopped spinach until wilted.
- Layer marinara sauce on the bottom of the baking dish. Place three noodles over sauce. Spread half ricotta over noodles; add half mushroom filling; sprinkle one-third mozzarella and half Parmesan on top.
- Repeat layers: sauce, noodles, ricotta, mushroom filling, mozzarella, Parmesan; finish with marinara sauce topped with remaining cheeses.
- Cover and bake for 25 minutes; uncover and bake for an additional 10–15 minutes until golden brown.
- Allow to cool slightly before slicing; garnish with fresh basil.
