- 1¼ cups graham cracker crumbs
- ¼ cup granulated sugar
- ⅓ cup melted unsalted butter (or 1 store-bought graham cracker crust)
- 1 (3 oz.) package watermelon Jello
- ¼ cup boiling water
- 2 cups fresh watermelon, cubed
- 2 (8 oz.) tubs Cool Whip (1½ tubs for filling and ½ tub for garnish)
Instructions
- If making your own crust, mix graham cracker crumbs and sugar in a bowl. Stir in melted butter until it resembles wet sand. Press mixture into a 9-inch pie dish and chill.
- Combine boiling water with watermelon Jello in another bowl and stir until dissolved. Allow to cool to room temperature.
- Once cooled, fold the Jello into a large bowl with 1½ tubs of Cool Whip until fluffy. Gently fold in watermelon cubes.
- Spoon filling into the chilled crust, smooth the top with a spatula, and refrigerate for at least 3 hours until set.
- Before serving, garnish with remaining Cool Whip and fresh watermelon slices.
