- 1 cup dry orzo pasta
- 1 yellow onion (finely chopped)
- 3 garlic cloves (minced)
- 3 cups low sodium chicken broth
- 5 ounces baby spinach
- Juice from ½ lemon
- ½ cup grated Parmesan
- 1 tbsp olive oil
- 1 tsp unsalted butter
- 1 tsp salt (divided)
- 1 tsp coarsely ground black pepper (divided)
- 1 tsp sweet paprika
- 1 tsp garlic powder
- 1 tsp dried thyme
- Freshly ground black pepper (for serving)
- Chili flakes (for serving)
Instructions
- Prepare all ingredients by chopping onions, mincing garlic, and seasoning the salmon.
- In a nonstick skillet, heat olive oil and butter over medium-high heat. Sear salmon fillets for 3-4 minutes on each side until golden brown. Remove from skillet.
- Sauté onion and garlic in the same skillet until fragrant, then add thyme.
- Stir in orzo, toast for a minute, then pour in chicken broth and simmer until nearly al dente.
- Mix in spinach until wilted, followed by lemon juice and Parmesan.
- Return the salmon to the skillet to warm through for a couple of minutes before serving.
