  • 6 slices thick-cut bacon
  • 16 oz. orecchiette pasta
  • 1 Tbsp unsalted butter
  • 16 oz. button mushrooms (sliced)
  • 1½ tsp minced garlic
  • 1 Tbsp cornstarch
  • 1 cup half-and-half
  • 1 cup milk
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • 2 tsp minced fresh thyme (or ½ tsp dried thyme)
  • ½ cup grated Parmesan cheese

Instructions

  1. In a large skillet over medium heat, cook bacon until crispy. Transfer to a paper towel-lined plate, leaving some fat in the skillet.
  2. Boil salted water in a large pot; cook orecchiette until al dente per package instructions. Drain and set aside.
  3. In the same skillet, melt butter and sauté mushrooms for about 3–4 minutes until browned. Add garlic and sauté for another 3–4 minutes.
  4. Whisk cornstarch into half-and-half in a bowl until smooth; add to skillet with milk, cooked bacon, salt, pepper, thyme, and Parmesan cheese. Stir to combine.
  5. Simmer on medium-low heat for 6–8 minutes until thickened.
  6. Toss cooked orecchiette into the sauce until well-coated.
