- 1 tsp instant espresso powder

- 120 g sour cream (room temperature)
- 75 g vegetable oil
- 2 large eggs (room temperature)
- 1 ½ tsp vanilla extract
- 6 Oreo cookies (for frosting)
- 200 g butter (cool room temperature)
- 315 g powdered sugar
- 1 tsp vanilla extract
- 2 tsp whole milk (room temperature)
- 12 Oreos for decoration + extra for crumbling on top
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a mixing bowl, combine sugar, cocoa powder, flour, espresso powder, baking powder, baking soda, and salt.
- In another bowl, whisk together sour cream, vegetable oil, eggs, and vanilla extract until well mixed.
- Gradually add the dry mixture to the wet ingredients while stirring continuously. Then stir in boiling water until smooth.
- Fill cupcake liners two-thirds full with batter and bake for about 22 minutes or until a toothpick comes out clean.
- Allow the cupcakes to cool completely before preparing the Oreo buttercream frosting by beating softened butter with powdered sugar and crushed Oreos.
