  • 20 small flour tortillas
  • 1 pound ground breakfast sausage
  • 1 (10 ounce) can diced tomatoes & green chiles
  • 2 tablespoons butter
  • 20 ounces shredded hashbrowns
  • 2.5 cups shredded Colby Jack cheese
  • 12 large eggs
  • 1 cup half & half
  • 1 cup sour cream

Instructions

  1. Spray two 9×13 baking dishes with non-stick spray and set aside.
  2. In a large skillet, brown the sausage until cooked through, then stir in diced tomatoes and green chiles.
  3. In the same skillet, sauté hashbrowns in butter until browned; season with salt and pepper.
  4. Combine sausage mixture with hashbrowns and mix in 2 cups of cheese.
  5. Fill each tortilla with about 1/4 cup of the mixture, roll them up tightly, and place seam side down in one dish.
  6. Whisk together eggs, half & half, sour cream, salt, and pepper; pour over tortillas and top with remaining cheese.
  7. Cover tightly with plastic wrap and refrigerate overnight or for at least 30 minutes before baking at 350°F for 30–40 minutes.
