  • 2 lbs boneless chicken breasts (or thighs)
  • 1 egg
  • 3/4 cup cornstarch
  • 1/3 cup all-purpose flour
  • 1/2 cup white distilled vinegar
  • 1/2 cup cane sugar
  • 1/4 cup soy sauce
  • 2 cloves garlic (crushed)
  • 1/2 tsp zested ginger root (peeled)
  • 1 Tbsp sunflower oil (or any neutral flavored oil)
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 1/4 cup water
  • 1/2 tsp crushed red pepper flakes
  • 1 Tbsp orange juice concentrate (or 3 Tbsp orange juice)
  • 1 Tbsp cornstarch
  • 1 tsp sesame oil
  • 1 tsp rice wine (or apple cider vinegar)

Instructions

  1. Cut the chicken into bite-sized pieces. In a bowl, whisk together the egg, oil, salt, and pepper. Add chicken and coat well.
  2. In another bowl, mix cornstarch and flour. Coat each piece of chicken with this mixture.
  3. Heat oil in a frying pan over medium-high heat and fry chicken pieces in batches until golden brown (about 5–7 minutes). Drain on paper towels.
  4. In a saucepan, combine vinegar, sugar, water, soy sauce, garlic, ginger, and other sauce ingredients. Cook until thickened.
  5. Toss fried chicken in the sauce until evenly coated and serve hot over rice or noodles.
