  • 1 (400g) tin of chickpeas
  • 120g ditalini pasta
  • 1 tbsp olive oil
  • 1 small onion or 2 shallots
  • 2 garlic cloves
  • Fresh rosemary sprig
  • 2 tbsp tomato paste
  • 60ml dry white wine or vinegar
  • 2 cups vegetable stock
  • 30g grated Pecorino cheese

Instructions

  1. Gather and prep all ingredients by chopping the onion, slicing the garlic, and dicing the rosemary.
  2. Heat olive oil in a skillet over medium heat. Sauté the onion for about 5-6 minutes until soft; add garlic and cook for another minute.
  3. Stir in rosemary, chili flakes, and tomato paste; cook for an additional minute.
  4. Add wine/vinegar to deglaze the pan, then add chickpeas and vegetable stock. Crush some chickpeas to thicken the sauce.
  5. Mix in uncooked ditalini pasta and cook until al dente (about 6–7 minutes).
  6. Stir in Pecorino cheese until melted and creamy. Serve hot with added garnishes if desired.
