  • ¼ cup whole milk
  • 1 teaspoon vanilla extract
  • ½ cup peach puree (fresh or canned)
  • 1 cup unsalted butter (for frosting, room temperature)
  • 34 cups powdered sugar (sifted)
  • 34 tablespoons peach puree (for frosting)
  • 12 tablespoons champagne or sparkling wine (for frosting)
  • Pinch of salt
  • Fresh peach slices (for garnish)
  • Candied peach or cherry (optional)
  • Sparkling sugar or granulated sugar (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In one bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time.
  4. Mix champagne, milk, vanilla extract, and peach puree in a separate bowl.
  5. Alternate adding dry ingredients and wet mixture into the butter mixture until combined.
  6. Fill liners two-thirds full and bake for about 18-20 minutes or until a toothpick comes out clean.
  7. For frosting, beat the butter until smooth; add powdered sugar gradually along with peach puree and champagne.
  8. Frost cooled cupcakes and garnish with fresh peaches and sparkling sugar.
