  • ½ cup granulated sugar

Instructions

  2. Set up a double boiler; fill the bottom pot with water and bring it to a simmer.
  3. In the top pot, combine egg yolks, sugar, lemon juice, salt, and peach purée. Whisk continuously as it heats.
  4. Cook until thickened (about 15 minutes) and reaches 170°F (77°C).
  5. Remove from heat and whisk in butter pieces gradually until melted.
  6. Cool by placing plastic wrap directly on the surface of the curd; refrigerate for about 2 hours.
