  • 10 tbsp unsalted butter, melted
  • 24 ounces cream cheese, room temperature
  • 1 1/4 cups light brown sugar, loosely packed
  • 3 tbsp all-purpose flour
  • 1 cup sour cream, room temperature
  • 1 tbsp vanilla extract
  • 4 large eggs, room temperature
  • 1 cup chopped pecans, toasted
  • 1/2 cup sugar
  • 1/2 cup packed light brown sugar
  • 3/4 cup heavy whipping cream
  • 4 tbsp unsalted butter, cut into cubes
  • 3/4 cup chopped pecans, toasted
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C). Prepare a 9-inch springform pan by lining the bottom with parchment paper and greasing the sides.
  2. Mix graham cracker crumbs, brown sugar, salt, and melted butter in a bowl. Press into the bottom and sides of the prepared pan. Bake for 10 minutes; cool.
  3. Lower oven temperature to 300°F (148°C). Beat cream cheese, brown sugar, and flour until smooth. Add sour cream and vanilla; mix well. Incorporate eggs one at a time, then fold in toasted pecans.
  4. Pour filling into crust. Place the springform pan in a larger pan filled with warm water halfway up its sides. Bake for 1 hour 15 minutes until set but jiggly in the center.
  5. Turn off the oven; let cheesecake cool inside for 30 minutes before cracking open for another 30 minutes.
  6. For the topping, heat sugars, heavy cream, and butter until melted; stir in pecans, salt, and vanilla. Cool before spreading over cheesecake.
