Instructions

  3. Add cubed chicken to the skillet; cook for about 5-7 minutes until golden brown.
  4. Stir in diced bell pepper and snap peas; cook for an additional 3-4 minutes until tender yet crisp.
  5. In a small bowl, whisk together soy sauce, chicken broth, honey (if using), and grated ginger. Pour over the chicken mixture along with pineapple chunks; stir to coat evenly and cook for another 2-3 minutes until slightly thickened.
  6. Season with salt and pepper. Serve over fluffed rice.
