  • 20 oz refrigerated cheese tortellini
  • 1 pound medium shrimp (shelled, deveined tails on)
  • 1 pint cherry tomatoes (halved)
  • 2/3 cup chopped dill pickles
  • 2 cups packed roughly chopped romaine lettuce
  • 1/4 cup thinly sliced small red onion
  • 2/3 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Cajun seasoning mix

Instructions

  1. Prepare the Remoulade Dressing: In a small bowl, whisk together the Cajun seasoning mix. Set aside a half teaspoon for later. Combine remaining dressing ingredients in a medium bowl with the reserved seasoning and whisk until smooth. Refrigerate until ready to serve.
  2. Season the Shrimp: Toss shrimp with olive oil and remaining Cajun seasoning in a medium bowl. Let sit while preparing other ingredients.
  3. Cook the Tortellini: Boil tortellini in salted water according to package instructions. Drain, rinse with cold water, and toss with olive oil to prevent sticking.
  4. Cook the Shrimp: In a large non-stick pan over medium-high heat, cook shrimp for about 4 minutes until pink and opaque. Remove tails once cool enough to handle.
  5. Assemble Salad: In a large bowl, combine cooked tortellini, shrimp, cherry tomatoes, pickles, lettuce, and red onion. Drizzle with remoulade dressing and toss gently.
