  • 2 teaspoons baking powder
  • 1/4 cup applesauce
  • 1/4 cup neutral-flavored oil
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam
  • 1 cup confectioners sugar
  • 1 cup vanilla protein powder (optional)
  • 2 tablespoons milk or water (as needed)
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat the oven to 325°F (170°C) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine whole wheat flour, vanilla protein powder, sugar, and baking powder; whisk until well blended.
  3. In another bowl, mix applesauce, oil, and vanilla extract until smooth.
  4. Combine wet and dry ingredients to form dough; refrigerate for 15 minutes.
  5. Roll out the dough between parchment paper and cut into rectangles.
  6. Fill half of the rectangles with strawberry jam; seal with another rectangle on top.
  7. Bake for 10–15 minutes until golden brown; cool completely before glazing.
