  • 1 small or ½ large fennel bulb (trimmed and diced)
  • 1.5 pounds ground beef
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1 tsp dried marjoram
  • 1 tsp smoked paprika
  • ½ tsp chili flakes
  • salt (to taste)
  • black pepper (to taste)
  • 1 ¾ cups beef broth
  • 1 bay leaf
  • 3 cups puréed tomatoes
  • 1 tbsp tomato paste
  • fresh thyme (for serving)
  • chili flakes (for serving)
  • 5 tbsp ricotta
  • 1 tbsp olive oil
  • 1 tbsp grated parmesan
  • salt (to taste)
  • black pepper (to taste)

Instructions

  1. Heat olive oil in a large saucepan over medium-low heat. Add shallots, garlic, and celery; cook for 5 minutes until softened.
  2. Stir in diced pumpkin; cook for another 5 minutes, then add fennel and cook for an additional 3 minutes.
  3. Increase heat to high, add ground beef, breaking it up with a wooden spoon. Cook until browned (about 10 minutes).
  4. Mix in herbs, spices, broth, and bay leaf; let simmer for 10 minutes. Add puréed tomatoes and tomato paste; cover and simmer until pumpkin is tender.
  5. Cook pasta according to package directions; serve topped with bolognese sauce, ricotta cheese, and fresh thyme.
