  • 1 cup pumpkin puree (not pie filling)
  • 1/2 cup softened unsalted butter
  • 1/2 cup warm milk
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In one bowl, mix dry ingredients: flour, spices, baking powder, baking soda, and salt.
  3. In another bowl, cream together softened butter and sugar with a hand mixer until fluffy.
  4. Add eggs one at a time to the creamed mixture; mix well.
  5. Stir in pumpkin puree and vanilla extract until combined.
  6. Gradually add dry ingredients and mix just until incorporated; then add warm milk and stir until smooth.
  7. Pour batter into the prepared loaf pan and bake for about 50-55 minutes or until a toothpick inserted comes out clean.
