  • 1 tbsp pumpkin pie spice
  • 1 1/2 cups granulated sugar
  • 10 tbsp unsalted butter
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/4 cup espresso or strong coffee
  • 8 oz cream cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In one bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt.
  3. In another bowl, beat softened butter and sugar until fluffy. Add eggs and vanilla; mix well.
  4. Incorporate buttermilk and pumpkin into the butter mixture until combined.
  5. Slowly add dry ingredients to wet ingredients; mix gently to combine.
  6. Divide batter between pans and bake for approximately 38 minutes or until a toothpick comes out clean.
  7. Prepare latte soak with espresso, milk, condensed milk, pumpkin pie spice, and vanilla; whisk together.
  8. Once cakes are baked and cooled slightly, poke holes in layers and pour soak evenly over them.
  9. For frosting, beat softened butter and cold cream cheese until smooth; gradually add powdered sugar followed by instant espresso powder and pumpkin pie spice.
  10. Assemble the cake by stacking layers with frosting in between and on top.
