  • 8 oz flank, skirt, or sirloin steak (thinly sliced)
  • 2 (7 oz) packs cooked or frozen udon noodles
  • 1 tbsp vegetable or avocado oil
  • ½ small onion (thinly sliced)
  • 3 garlic cloves (minced)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp oyster sauce (or hoisin sauce for vegetarian)
  • 1 tsp sugar
  • 1 tbsp cornstarch mixed with 3 tbsp water
  • 1 tsp freshly cracked black pepper
  • ½ tsp sesame oil

Instructions

  1. Slice beef thinly against the grain and season lightly with salt and pepper. Optional: toss with soy sauce and cornstarch for tenderness.
  2. In a bowl, whisk together soy sauce, oyster sauce, sugar, black pepper, sesame oil, and cornstarch slurry; set aside.
  3. Heat oil in a large skillet over medium-high heat. Sear beef until browned; remove from pan.
  4. In the skillet, sauté garlic and onion until fragrant.
  5. Add udon noodles and prepared sauce; toss to combine and heat through.
  6. Return beef to skillet; mix until everything is coated in sauce. Serve with optional toppings.
