  • 1 lb jumbo shrimp (peeled and deveined)
  • 4 egg whites
  • 2/3 cup cornstarch
  • 1/4 cup Japanese mayo
  • 3 tbsp sweetened condensed milk
  • 2 tbsp honey
  • 1/2 cup walnuts
  • 1 cup vegetable oil for frying

Instructions

  1. Prepare the sauce by mixing Japanese mayo, sweetened condensed milk, honey, and lemon juice in a small bowl. Set aside.
  2. In a non-stick pan, combine sugar and cold water over medium heat to make candied walnuts. Stir until thickened and coat walnuts before cooling them on parchment paper.
  3. Season shrimp with salt and pepper, then coat with a batter made from whisked egg whites and cornstarch.
  4. Heat oil in a large pan and fry shrimp in batches until golden brown (2–3 minutes). Drain on paper towels.
  5. Toss crispy shrimp with candied walnuts and sauce in a large bowl. Garnish with chopped green onions before serving.
