  • 14 oz firm tofu, pressed and cubed
  • 1 cup bell peppers, sliced (mix of colors)
  • 1 cup broccoli florets
  • 1 cup carrots, thinly sliced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp toasted sesame oil
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced

Instructions

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
  2. Heat vegetable oil in a skillet over medium-high heat until shimmering.
  3. Add tofu in a single layer; cook for about 5 minutes until golden brown. Flip and brown all sides.
  4. Add bell peppers, broccoli, and carrots; stir-fry for about 5-7 minutes until tender yet crisp.
  5. Whisk together soy sauce, sesame oil, garlic, and ginger; pour over the stir-fry and cook for an additional 2 minutes.
  6. Serve over rice or noodles.
