Ingredients
- 8–12 medium roasting potatoes
- 200 g crumbled feta cheese
- 3 tbsp capers or sliced black olives
- 2 cloves of garlic, sliced
- 1 red onion, thinly sliced
- Fresh rosemary sprig
- 1 lemon, cut into quarters
- Olive oil for drizzling
- Salt and pepper to taste
Instructions
- Preheat the oven to 200C (400F) and drizzle a large skillet or roasting tray with olive oil.
- Rinse the potatoes and pierce them with a knife.
- Microwave the pierced potatoes in a covered bowl for 7-12 minutes until tender.
- Smash each potato gently in the skillet.
- Drizzle with olive oil, season with salt and pepper, and add garlic, rosemary, and lemon wedges.
- Roast for about 10 minutes until golden.
- Add feta cheese, onion, and capers; return to the oven for another 5 minutes.
- Serve hot with a squeeze of roasted lemon juice.
