  • 4 cups chicken broth
  • 1 lb chicken breast, cubed
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 cups pasta (campanelle or fusilli)
  • 1 cup spinach
  • 1 tbsp nutritional yeast
  • 1 cup half-and-half
  • 2 tbsp cornstarch
  • Ricotta cheese
  • Parmesan cheese
  • Mozzarella cheese

Instructions

  1. In a large pot over medium heat, melt the butter and sauté the diced onion until translucent. Add minced garlic and cook until fragrant.
  2. Stir in Italian seasoning, salt, pepper, and chili flakes; mix well.
  3. Add chicken chunks and cook until no longer pink.
  4. Pour in chicken broth and bring to a boil before reducing to a simmer.
  5. Add pasta and sun-dried tomatoes; cook according to package instructions until al dente.
  6. Stir in spinach until wilted.
  7. In a separate bowl, whisk half-and-half with cornstarch until smooth; gradually add to the pot while stirring.
  8. Mix in ricotta, parmesan, and mozzarella until melted thoroughly. Serve hot.
