  • 6 rice paper wrappers
  • 1 red pepper (thinly sliced)
  • 2 carrots (thinly sliced)
  • 1 yellow bell pepper (thinly sliced)
  • 1 large bunch of mint leaves
  • 1 large bunch of cilantro
  • ¼ red cabbage (thinly sliced)
  • ½ cup peanut butter
  • 1½ tbsp low sodium soy sauce
  • 1 tbsp raw honey
  • 2 tbsp freshly squeezed lime juice
  • ½ tsp chili paste
  • 1 tsp fresh grated ginger

Instructions

  1. Wash and slice all vegetables into thin strips.
  2. In a mixing bowl, whisk together peanut butter, soy sauce, honey, lime juice, chili paste, and grated ginger until smooth; set aside.
  3. Soften each rice paper wrapper in warm water for about 10-15 seconds until pliable.
  4. Lay the softened wrapper on a clean surface and add a small amount of sliced veggies and herbs near one edge.
  5. Fold in the sides and roll tightly from that edge. Repeat until all ingredients are used.
  6. Serve the spring rolls chilled with Ginger Peanut Sauce on the side for dipping.
