  • 1 1/4 cup nonfat plain Greek yogurt
  • 1 jalapeño pepper
  • 1 cup uncooked farro
  • 1 cup uncooked sprouted lentils
  • Assorted fresh vegetables (corn, cherry tomatoes, cucumbers, snap peas)
  • Fresh herbs (parsley, basil)
  • Nuts or seeds (crushed almonds)
  • 1/2 cup 2% milk
  • 2 teaspoons white vinegar
  • 2 tablespoons olive oil
  • 1 clove garlic
  • 1 teaspoon salt
  • 1 teaspoon dill
  • 1 handful fresh parsley leaves (about 1/4 cup)
  • 1 handful chives (about 1/4 cup)
  • 3 cups vegetable broth
  • 1/2 tablespoon butter or oil
  • 12 avocados
  • salt and pepper to taste

Instructions

  1. Make the Jalapeño Ranch dressing by blending Greek yogurt, jalapeño, olive oil, garlic, vinegar, dill, parsley, chives, salt, and pepper in a food processor until smooth.
  2. Cook farro in boiling vegetable broth according to package instructions. Rinse lentils and cook separately until tender.
  3. Sauté corn kernels in a skillet until tender; season with salt and pepper.
  4. Assemble the bowls by layering cooked farro and lentils at the base. Arrange assorted veggies on top and add sliced avocado.
  5. Drizzle with Jalapeño Ranch dressing just before serving.
