Ingredients
- 1 1/4 cup nonfat plain Greek yogurt
- 1 jalapeño pepper
- 1 cup uncooked farro
- 1 cup uncooked sprouted lentils
- Assorted fresh vegetables (corn, cherry tomatoes, cucumbers, snap peas)
- Fresh herbs (parsley, basil)
- Nuts or seeds (crushed almonds)
- 1/2 cup 2% milk
- 2 teaspoons white vinegar
- 2 tablespoons olive oil
- 1 clove garlic
- 1 teaspoon salt
- 1 teaspoon dill
- 1 handful fresh parsley leaves (about 1/4 cup)
- 1 handful chives (about 1/4 cup)
- 3 cups vegetable broth
- 1/2 tablespoon butter or oil
- 1–2 avocados
- salt and pepper to taste
Instructions
- Make the Jalapeño Ranch dressing by blending Greek yogurt, jalapeño, olive oil, garlic, vinegar, dill, parsley, chives, salt, and pepper in a food processor until smooth.
- Cook farro in boiling vegetable broth according to package instructions. Rinse lentils and cook separately until tender.
- Sauté corn kernels in a skillet until tender; season with salt and pepper.
- Assemble the bowls by layering cooked farro and lentils at the base. Arrange assorted veggies on top and add sliced avocado.
- Drizzle with Jalapeño Ranch dressing just before serving.
