  • 1 cup whole milk
  • 6 tablespoons butter
  • 2 cups granulated sugar
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon vanilla extract
  • 10 ounces frozen raspberries
  • 2 cups powdered sugar
  • 2 cups desiccated coconut

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a baking pan with parchment paper.
  2. In a bowl, whisk together eggs, milk, melted butter, and vanilla until well blended.
  3. In another bowl, mix cake flour, baking powder, salt, and granulated sugar. Gradually combine with the wet mixture until smooth.
  4. Pour batter into the prepared pan and bake for 30-40 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  5. For the glaze, heat water with granulated sugar until dissolved. Add thawed raspberries and gelatin; simmer for 5 minutes before cooling slightly.
  6. Cut cooled cake into squares. Dip each square in raspberry glaze then roll in desiccated coconut.
