Ingredients
- 500 g frozen raspberries
- 100 g granulated sugar
- 1 tbsp lemon juice
- 120 g water
- 30 g frozen raspberries
- 3 tbsp limoncello (optional)
- 450 g cold mascarpone cheese
- 120 g powdered sugar
- 2 tbsp lemon juice
- 1 tsp vanilla paste
- 480 g cold heavy cream
- 25 ladyfinger cookies
- Fresh raspberries and lemon slices for decoration
Instructions
- Prepare the raspberry jam by heating frozen raspberries, sugar, lemon juice, and water in a saucepan until thickened. Cool before use.
- Mix mascarpone cheese with powdered sugar, lemon juice, and vanilla paste until smooth. Whip heavy cream separately until stiff peaks form and fold into the mascarpone mixture.
- Dip ladyfingers in raspberry jam briefly and layer them in a baking dish with half of the mascarpone mixture. Repeat layers.
- Refrigerate for at least 4 hours before serving. Decorate with fresh raspberries and lemon slices.
