- 1–2 cups quality tomato sauce
- 2 cloves garlic, minced
- 1 eggplant, thinly sliced
- 1 zucchini, thinly sliced
- 1 yellow squash, thinly sliced
- 1 red bell pepper, thinly sliced
- 2–3 medium potatoes, thinly sliced
- 1 tbsp unsalted butter
- 1 tbsp all-purpose flour
- 1 cup milk
Instructions
- Preheat the oven to 375°F (190°C).
- Thinly slice the potatoes and par-cook them in boiling salted water for 3-4 minutes. Drain and set aside.
- Slice the remaining vegetables using a mandoline slicer for even thickness.
- Prepare the béchamel sauce: melt butter in a saucepan, add flour to form a roux, then gradually whisk in warm milk until thickened.
- In a greased baking dish, spread a layer of tomato sauce mixed with garlic. Drizzle with béchamel.
- Layer the sliced vegetables in a spiral pattern on top.
- Cover with parchment paper and bake for 55-60 minutes until tender.
- Let cool slightly before serving.
