- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced (preferably English)
- 1 cup bell peppers, diced (mixed colors)
- 1/2 cup red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot. Cook the rotini according to package instructions until al dente. Drain and rinse under cold water.
- While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, red onion, and olives into bite-sized pieces.
- In a small bowl or jar, combine olive oil, balsamic vinegar, oregano, salt, and pepper. Whisk or shake until well mixed.
- In a large mixing bowl, add cooled pasta along with chopped vegetables and crumbled feta cheese. Pour dressing over everything and toss gently.
