  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced (preferably English)
  • 1 cup bell peppers, diced (mixed colors)
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Cook the rotini according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, red onion, and olives into bite-sized pieces.
  3. In a small bowl or jar, combine olive oil, balsamic vinegar, oregano, salt, and pepper. Whisk or shake until well mixed.
  4. In a large mixing bowl, add cooled pasta along with chopped vegetables and crumbled feta cheese. Pour dressing over everything and toss gently.
  5. Cover with plastic wrap or transfer to an airtight container; refrigerate for at least one hour before serving.
