- 1 cup green or brown lentils
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 0.5 red onion, thinly sliced
- 0.5 cup fresh parsley, chopped
- Juice of 1 lemon (about 2 tbsp)
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse lentils under cold water. In a pot, combine lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender but firm. Drain.
- While lentils cook, chop the cherry tomatoes, dice the cucumber, slice the red onion, and chop the parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- In a large bowl, combine cooked lentils with chopped vegetables and dressing. Toss gently until mixed.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
