  • 2 cups fresh strawberries, sliced
  • 1 cup English cucumber, thinly sliced

Instructions

  1. Wash strawberries under cold water, remove stems, and slice into quarters. Wash cucumber and slice thinly.
  2. Finely chop red onion and roughly chop mint leaves.
  3. In a large bowl, combine strawberries, cucumber, red onion, and mint. Toss gently.
  4. In a small bowl, whisk together lemon juice with salt and pepper.
  5. Pour dressing over the salad mixture and toss until evenly coated.
