  • 3 tablespoons extra virgin olive oil
  • 4 thick-cut bacon slices, chopped
  • 1/4 cup honey
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons salted butter
  • 4 ounces goat cheese, crumbled (or grated Manchego cheese)
  • 1 cup pomegranate arils

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. On a rimmed baking sheet, toss brussels sprouts with olive oil, salt, and pepper. Arrange cut side down and scatter chopped bacon around them.
  3. Roast for 20-25 minutes until brussels sprouts are browned and bacon is crisp.
