  • 2 cups fresh cherries (pitted and halved)
  • 1 1/3 cups granulated sugar
  • 2 large eggs
  • 1 egg yolk
  • 5 tbsp unsalted butter (melted)
  • 1/3 cup vegetable oil
  • 1 tsp pure vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch-process cocoa powder
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper. Spread halved cherries on the sheet and sprinkle with sugar. Roast for about 10 minutes until tender, then cool.
  2. Reduce oven temperature to 325°F and prepare an 8×8 baking pan by spraying it with non-stick spray and lining with parchment paper.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt.
  4. Using a mixer, beat together sugar, eggs, and egg yolk for about five minutes until fluffy. Add melted butter, oil, and vanilla; mix on low speed.
  5. Gently fold in dry ingredients until just combined. Mix in half of the roasted cherries and chocolate chips.
  6. Pour batter into the prepared pan, spread evenly, and bake for 40-50 minutes until edges are set but center is slightly underdone.
  7. Cool in the pan before cutting into squares. Top with remaining roasted cherries if desired.
