- 9 Roma tomatoes
- 3 tbsp extra virgin olive oil
- 2 tbsp unsalted butter
- 1 yellow onion
- 4 garlic cloves
- 1 tbsp fresh thyme
- 1 tsp Kosher salt
- ½ tsp ground black pepper
- 1 can (28 oz.) crushed San Marzano tomatoes
- 1 cup fresh basil
- 1 tbsp sugar
- 2 cups chicken stock
- ⅔ cup heavy cream
Instructions
- Preheat oven to 375°F.
- Arrange tomato halves on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 1 hour until soft.
- In a large pot, melt butter with olive oil over medium-high heat. Sauté diced onion for 5 minutes; add minced garlic, thyme, salt, and pepper; cook until fragrant.
- Mix in crushed tomatoes, basil, and sugar; simmer for 10 minutes.
- Add chicken stock and roasted tomatoes; simmer for another 30 minutes.
- Blend the soup until smooth using an immersion blender or regular blender.
