- 4–5 bone-in chicken thighs
- 2 tbsp fresh rosemary, chopped
- 1 red onion, sliced
- 1–2 Honeycrisp apples, sliced
- 3/4 cup apple cider
- 2 tbsp Dijon mustard
- 4 tbsp salted butter
- Olive oil, salt, and pepper
Instructions
- Preheat oven to 425°F.
- Season chicken thighs with onion powder, garlic powder, smoked paprika, thyme, rosemary, salt, and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken thighs for 4-5 minutes per side until golden brown.
- Add sliced red onion and Honeycrisp apples to the skillet around the chicken.
- Transfer skillet to the preheated oven and bake for 20-25 minutes until chicken reaches an internal temperature of 165°F.
- For the sauce: After removing chicken from pan, melt butter in skillet over medium heat. Add apple cider, chicken broth (or white wine), Dijon mustard, and minced garlic; whisk until combined.
