- 3 1/2 – 4 cups all-purpose flour
- 1 packet (2 1/4 teaspoons) instant yeast
- 1 teaspoon salt
- 3/4 cup warm milk
- 3 tablespoons honey
- 6 tablespoons salted butter, at room temperature
- 3 eggs, at room temperature
- 1 egg yolk, beaten with 1 tablespoon water
- Flaky sea salt
- 12 sage leaves
- 6 tablespoons salted butter, at room temperature
- 3 tablespoons honey
Instructions
- In a stand mixer bowl, combine 3 ½ – 4 cups flour, 2 ¼ teaspoons yeast, and 1 teaspoon salt.
- Add ¾ cup warm milk, 3 tablespoons honey, 6 tablespoons butter, and 3 eggs; mix until incorporated.
- Cover and let rise at room temperature for 15 minutes to an hour.
- Fry sage leaves in butter until crisp; chop finely and mix into remaining butter with honey.
- Preheat oven to 350°F (175°C). Punch down dough and divide; roll each half into a square.
- Brush squares with sage honey butter; cut into strips and shape into coils in a baking dish.
- Let rise for another 30 minutes before brushing with egg yolk and baking for 22-25 minutes until golden.
