- 250g Dry Paccheri pasta (or preferred shape)
- 400g sausages (or sausage meat)
- 2 shallots or 1 small brown onion
- 1 tsp fennel seeds
- 1 large lemon (zest and juice)
- 1–2 tsp chili flakes
- 2 cloves garlic
- 300ml pasta water
- 70g Parmesan cheese
- 60ml Crème fraîche or double cream
- 15g parsley
Instructions
- Heat a stainless steel pan over high heat until hot.
- Add oil and sauté crumbled sausage until browned (10-12 minutes).
- Incorporate shallots and fennel seeds; cook until softened (4-5 minutes).
- Cook pasta in boiling water until al dente.
- Add lemon zest, chili flakes, and sliced garlic to the sausage mixture; stir for one minute.
- Combine drained pasta with sausage mixture along with reserved pasta water, crème fraîche, and Parmesan; toss until creamy.
- Season with additional lemon juice if desired and garnish with parsley before serving.
