  • 1 lb ground pork sausage
  • 1 cup pumpkin puree
  • 15 oz ricotta cheese
  • 9 no-boil lasagna noodles
  • 1 1/2 cups mozzarella cheese
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 1/2 cup milk (or half and half)
  • 1/4 teaspoon salt
  • 1/4 tsp ground black pepper
  • pinch nutmeg
  • 1 shallot (minced)
  • 4 cloves garlic (minced)
  • 1/8 tsp ground red pepper flakes
  • 4 cup spinach (roughly chopped)
  • 1 large egg
  • 1/4 tsp dried sage (or 1 tsp. freshly minced sage)
  • 1/4 tsp salt
  • 1/4 cup parmesan cheese (grated)
  • 1 tbsp parsley (freshly chopped (optional))

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8 or 9×9 baking dish.
  2. In a saucepan, melt butter and whisk in flour; gradually add milk until thickened. Stir in pumpkin puree and seasonings.
  3. In a skillet, brown the sausage with shallots and garlic; mix in spinach until wilted. Combine with ricotta, egg, sage, salt, mozzarella, and parmesan.
  4. Layer sauce, noodles, filling in the baking dish; repeat layers ending with sauce and mozzarella on top.
  5. Cover with foil and bake for 20 minutes; uncover and bake another 20 minutes until golden brown.
  6. Let rest before serving.
