  • 21/4 cups mirepoix (or diced carrots, celery, and onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 3 cups milk
  • 2 cups shredded extra-sharp Cheddar cheese

Instructions

  1. In a large pot, cook the Italian sausage over medium-high heat until browned. Remove and set aside.
  2. Sauté the mirepoix in the same pot until softened, then add garlic.
  3. Stir in potatoes, seasonings, and chicken stock; bring to a boil and simmer until potatoes are tender.
  4. In a separate pot, create a cream mixture by whisking flour into melted butter, then gradually adding milk and heavy cream until thickened.
  5. Combine the cream mixture with the soup, stir in cheese and cooked sausage until melted.
