Ingredients

  • 2 acorn squash
  • ½ pound ground Italian sausage
  • 3 cups kale (chopped)
  • ½ large onion (diced)
  • ½ large apple (chopped)
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F. Line a cookie sheet with parchment paper.
  2. Halve the acorn squash and scoop out the seeds. Place cut-side down on the sheet and bake for 20 minutes until fork-tender.
  3. In a skillet, cook the sausage over medium heat until browned; remove and set aside.
  4. Sauté onions in the same skillet until softened, then add kale, garlic, celery, apple, and herbs. Cook for another 4-5 minutes.
  5. Combine the sausage back into the vegetable mixture and season to taste.
  6. Fill each baked squash half with the sausage mixture and top with feta and nuts. Bake for an additional 20 minutes until heated through.
