- 5 Tbsp butter (divided)
- 32 oz frozen whole kernel corn (thawed)
- 1.5 cups half and half
- 3 large eggs
- 2 Tbsp granulated sugar
- 0.5 tsp salt
- 0.125 tsp ground nutmeg
- 1.5 cups sharp white cheddar or pepper-jack cheese (divided)
- 1 sleeve round butter crackers (crushed and divided)
Instructions
- Preheat your oven to 325°F and butter a 13×9-inch baking dish with 1 tablespoon of butter.
- In a medium bowl, whisk together half and half, eggs, sugar, salt, and nutmeg until well combined.
- In a large bowl, combine thawed corn with the egg mixture, 3/4 cup cheese, and 1/2 cup crushed crackers; mix well.
- Pour the corn mixture into the prepared baking dish.
- Bake for about 30 minutes.
- While baking, melt the remaining butter and toss it with the remaining cracker crumbs.
- After 30 minutes, sprinkle reserved cheese and cracker crumbs on top, then bake for an additional 20–30 minutes until golden brown.
- Allow it to cool for about 5 minutes before serving.
