  • 1 lb sea scallops (dry-packed)
  • 1 bunch asparagus, trimmed
  • 2 tbsp butter (divided)
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss asparagus with olive oil, salt, and pepper; spread on a baking sheet and roast for 10–12 minutes until tender.
  3. Pat scallops dry; season with salt and pepper.
  4. In a saucepan over medium heat, melt 1 tbsp butter, add garlic, sauté until fragrant. Stir in cream and lemon juice; simmer for 5–7 minutes until thickened.
  5. In a hot skillet with remaining butter and olive oil, sear scallops for 2–3 minutes per side until golden brown.
  6. Assemble bowls: spoon sauce into bowls, top with asparagus and scallops, then garnish with fresh herbs.
