  • 1 medium onion (diced)
  • 1 red bell pepper (seeded and diced)
  • 4 garlic cloves (finely chopped)
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • ¼ teaspoon chili powder
  • 1 (28-ounce can) whole peeled tomatoes
  • 6 large eggs
  • salt and pepper (to taste)
  • 1 small bunch fresh cilantro (chopped)
  • 1 small bunch fresh parsley (chopped)

Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Add diced onion and red bell pepper; cook until the onion is translucent.
  2. Stir in minced garlic, paprika, cumin, and chili powder; cook for another minute until fragrant.
  3. Add canned tomatoes with juice, breaking them down with a spoon. Season with salt and pepper; simmer the sauce.
  4. Create wells in the sauce and crack an egg into each one. Cover the pan and cook until your desired doneness is reached (5-8 minutes).
  5. Garnish with chopped cilantro and parsley before serving warm.
