Instructions
- In a mixing bowl, combine chopped shrimp, panko breadcrumbs, mayonnaise, egg, parsley, Dijon mustard, lemon zest, Old Bay seasoning, salt, and pepper. Mix until well combined.
- Form the mixture into compact patties about 2 inches in diameter.
- Heat olive oil in a frying pan over medium heat until shimmering.
- Fry the patties for about 3–4 minutes on each side until golden brown. Drain on paper towels.
- For the Lemon Aioli: Mix mayonnaise, lemon juice, lemon zest, minced garlic, salt, and pepper in another bowl until smooth.
