  • 100 g active sourdough starter
  • 70 g cane sugar
  • 1 large egg
  • 430 g bread flour
  • 5 g sea salt
  • 113 g unsalted butter (8 tablespoons)
  • 5 tablespoons unsalted butter (filling)
  • 1/2 cup cane sugar (filling)
  • 2 tablespoons cocoa powder (filling)
  • 1 cup semi-sweet chocolate chips (filling)
  • 1/4 cup whole milk (topping)
  • 1/4 cup cocoa powder (topping)
  • 1 cup powdered sugar (topping)
  • 1 teaspoon vanilla (topping)

Instructions

  1. In a mixing bowl, combine whole milk, sourdough starter, cane sugar, and egg. Mix well.
  2. Gradually add in bread flour and sea salt. Knead with a stand mixer until smooth.
  3. Incorporate unsalted butter and knead until elastic.
  4. Place dough in a greased bowl to rise for about 3-4 hours or until doubled.
  5. Prepare filling by mixing softened butter with sugar and cocoa powder until smooth.
  6. Roll out dough into a rectangle; spread filling and roll tightly into a log. Cut into equal pieces.
  7. Allow rolls to rise for another 2 hours on a lined baking sheet.
  8. Bake at 350°F (175°C) for about 25–30 minutes until golden brown.
  9. Make topping by whisking together whole milk, cocoa powder, powdered sugar, and vanilla; drizzle over warm rolls.
