  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground nutmeg
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked + drained

Instructions

  1. Boil sweet potatoes in salted water until tender (about 15-20 minutes). Drain.
  2. In a mixing bowl, mash sweet potatoes with olive oil, cinnamon, nutmeg, almond milk, vanilla extract, and butter until smooth.
  3. Mix in brown sugar and maple syrup until well combined.
  4. Spread the sweet potato mixture into a baking dish evenly.
  5. In another bowl, combine brown sugar, cinnamon, nutmeg, allspice, raisins, marshmallows, pecans, and maple syrup for the topping.
  6. Evenly distribute the topping over the sweet potato base.
  7. Bake at 350°F (175°C) for 45-50 minutes or until bubbly and golden.
