Description

Ingredients

  • ½ cup mayonnaise
  • ¼ cup sweet pickle relish
  • 2 teaspoons yellow mustard
  • ½ cup celery (diced)
  • 2 large hardboiled eggs (diced)
  • 2 tablespoons apple cider vinegar

Instructions

  1. Peel and dice the potatoes into ¾-inch cubes, then place them in a large saucepan covered with cold water.
  2. Bring to a boil over high heat, adding 1 tablespoon of salt once boiling. Reduce heat and simmer until fork-tender (8-10 minutes). Drain.
  3. Transfer potatoes to a bowl and mix in apple cider vinegar while warm; let sit for 20 minutes.
  4. In a separate bowl, whisk together mayonnaise, relish, mustard, salt, black pepper, and garlic powder.
  5. Combine the cooled potatoes with the dressing and mix in celery and diced hardboiled eggs.
  6. Refrigerate for at least an hour before serving; garnish with paprika.
