Instructions
- Peel and dice the potatoes into ¾-inch cubes, then place them in a large saucepan covered with cold water.
- Bring to a boil over high heat, adding 1 tablespoon of salt once boiling. Reduce heat and simmer until fork-tender (8-10 minutes). Drain.
- Transfer potatoes to a bowl and mix in apple cider vinegar while warm; let sit for 20 minutes.
