- 1 tsp salt
- 1/4 tsp black pepper
- 2 cups Monterey jack cheese
- 20 egg roll wrappers
Instructions
- In a large bowl, combine the chicken, corn, black beans, spinach, bell pepper, and jalapeno.
- Add the spices and mix well to ensure even coating.
- Fold in the Monterey jack cheese until combined.
- Lay an egg roll wrapper on a clean surface with one point facing you. Place 2-3 tablespoons of the mixture in the center.
- Fold the bottom corner over the filling, tuck in the side corners tightly, and roll up to seal edges using water.
- Repeat with remaining wrappers and filling.
