  • 1 cup corn (drained and rinsed)
  • 1 cup black beans (drained and rinsed)
  • 1 cup spinach (chopped)
  • 1 cup diced red bell pepper
  • 1/4 cup diced jalapeno (de-seeded)
  • 1/2 TBS cumin
  • 1/2 TBS chili powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 cups Monterey jack cheese
  • 20 egg roll wrappers

Instructions

  1. In a large bowl, combine the chicken, corn, black beans, spinach, bell pepper, and jalapeno.
  2. Add the spices and mix well to ensure even coating.
  3. Fold in the Monterey jack cheese until combined.
  4. Lay an egg roll wrapper on a clean surface with one point facing you. Place 2-3 tablespoons of the mixture in the center.
  5. Fold the bottom corner over the filling, tuck in the side corners tightly, and roll up to seal edges using water.
  6. Repeat with remaining wrappers and filling.
  7. Freeze if not cooking immediately.
