  • 2 cups cooked rice (white, brown, or jasmine)

Instructions

  1. Cook rice according to package instructions; set aside.
  2. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, cooking for 6-7 minutes per side until browned. Remove from skillet.
  3. In the same skillet, sauté onion for 3-4 minutes. Add garlic and ginger; cook for another minute.
  4. Stir in cumin, coriander, turmeric, and chili powder; cook briefly.
  5. Pour in coconut milk and chicken broth; deglaze the skillet.
  6. Return chicken to the skillet and simmer for 5 minutes.
