  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/4 cup pure maple syrup
  • 1/4 cup soy sauce
  • 1 tablespoon sriracha sauce
  • 2 cloves garlic, minced
  • 1 teaspoon chili flakes
  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together maple syrup, soy sauce, sriracha, garlic, and chili flakes.
  3. Season chicken with salt and pepper. Heat olive oil in a skillet and sear each breast for 2-3 minutes until golden brown.
  4. Place chicken in a baking dish, pour marinade over it, and bake for 20-25 minutes until cooked through (165°F internal temperature).
  5. Meanwhile, cook the coconut rice by boiling jasmine rice with coconut milk and chicken broth in a saucepan for about 18-20 minutes until tender.
  6. Serve chicken over the rice, drizzled with extra sauce and garnished with cilantro and lime wedges.
